Abstract: The objective of the HONANTICAN operating group is to produce and commercialize a food, or a food supplement, based on the antitumor properties of cultivated mushrooms, whose production of antitumor substances will be increased by acting on the cultivation methodology and/or raw materials. The working line that will be followed is, in a first stage, the optimization of cultivation methodologies to reach an increase in the antitumor capacity. As a second stage, obtaining and characterizing the functional food or food supplement, and finally, get te validation on mushrooms farms and food factories.
